SENSORY CHARACTERISTICS


COLOR: GOLDEN, WHITE CRUMB.
TASTE AND SMELL: MALT, TYPICAL OF FRESH BREAD.
TEXTURE: CRISPY AND LIGHTWEIGHT.

Artisan Bread made using a manual process which results in a very tender bread with a thin and crispy crust, lightweight with a larger alveolus than the best “chapatas”.

INSTRUCTIONS


DEFROST: IT IS NOT NECESSARY TO DEFROST THE PRODUCT BEFORE USE, BUT THE BAKERY TIME COULD BE REDUCED BY THAWING THE BREAD FOR 10 MINUTES PREVIOUS TO BAKING.
BAKING:
SIZE 56/57 CM: INSERT FULL PIECE.
SIZE 80/85 CM: IN THE CASE WHERE YOU CANNOT PUT THE ENTIRE PIECE IN THE OVEN, IT IS POSSIBLE TO CUT THE PIECE IN HALF.
PREHEAT THE OVEN AT 180-190ºC. BAKE FOR 12-14 MINUTES (THE MORE TIME THE BREAD IS COOKED, THE CRISPIER IT WILL BE).
SALAMANDER OVEN: CUT THE PIECE OF BREAD LENGTH WAYS WITH A BREAD KNIFE. TOAST THE BREAD, CRUST SIDE UP FOR 4/5 MINUTES APPROX. CONSIDER THAT THE UPPER PART OF THE BREAD WILL BE TOASTED FASTER THAN THE LOWER PART BECAUSE THE CRUST IS THINNER.
